Description: A subproduct with a dark crimson color and a firm, tough texture. The product consists solely of muscle tissue. It is rich in iron, folic acid, vitamins, and minerals.
Organoleptic characteristics: Without the pericardial sac and external blood vessels, with tightly adhered external fat, longitudinal and transverse cuts from the cavities, thoroughly washed of blood and contaminants. Residual aorta fused with muscle tissue is allowed, up to 1.5 cm in length.
Shelf life and storage conditions:
Chilled product at relative humidity of 85%-90% and temperature from -1°C to 0°C for 2 days;
Frozen product at relative humidity of 95%-98% for 4 months at a temperature not exceeding -12°C; 6 months at a temperature not exceeding -18°C; 7 months at a temperature not exceeding -20°C; 10 months at a temperature not exceeding -25°C.
Transportation conditions: in isothermal vehicles with installed cooling equipment, which ensures the preservation of product quality in accordance with the rules of transportation of perishable goods operating on the corresponding mode of transport.
